However, I'm the sort of person who takes a lot of convincing before plonking down some cash, so has anyone else got any thoughts on how this plays out with kids under 8? Are there any rules elements that you've had to alter to make it easier?
I love Sentinels of the Multiverse, but it could be tough for kids under 8, really tough IMO. However, if you take some time and teach them how a superhero works, given that each deck is only 40 cards and many duplicates, they don't have to learn so many details, but the game is a bit math heavy and I think best with older children, say 10+.

Also, I see the game supports up to 5, but my regular game group (away from the kids) is 6 people - anyone had any luck playing this with more than 5?
This is another no IMO. I find the game much better with fewer players, and six players would make the game quite easy. You would have to play against the toughest villains on the advanced level, in the harshest environments, and maybe even then have to pick a sub-optimal group to make it a fair fight.
